From a one-hectare parcel of century-old vines in Apremont, this Jacquère grows on white limestone scree over clay-limestone soils. Organically farmed and hand harvested, the grapes are whole-bunch pressed and fermented spontaneously with native yeasts in used oak. After full malolactic fermentation, the wine spends 24 months aging in used barrels before bottling without fining or filtration.
